The instructions from seed companies when you but sets is to spread them out in a cool light place.

I can understand spreading out and cool, but why light?

If they do shoot, they won't send out long, straggly, sickly leaves.

Rather like chitting spuds in the dark!

Mine stay in the loft - cool and dark. Never had a problem with them shooting.

And if they did, you'd very soon get some long shoots.
