Poultry grass leys

I am currently constructing two free range poultry grass seed mixtures for an online seeds store, one economy mixture, the other a high protein blend.
To be perfectly honest I know very little about poultry and the foraging requirements of free range birds.
I understand shorter tillering grasses are recommended and presumably legumes would provide protein, but I'm really struggling to find any further useful information from my research.
Would anyone in this section be able to advise me or at least have strong feelings about how these two mixtures should be constructed or what they should contain.

Be really interested in any fast growing grass seed!!!Particulary would be good when rotating the birds on free range.
