Cooking some skinny lamb chops in mint gravy (there'd be nothing left if I roasted or grilled them  ::)) with peas, carrots and mash  :)

Quite a lot of lamb gravy left over, too good to waste - so I soaked some Pinto beans overnight, will add those and some more of the usual veg, to make a thick, mostly, veg stew.

End up with mac and cheese last night (don't ask). I found a bit of cauli in the freezer so the plan is for a chicken dinner tonight.

Got a whole tray of mushrooms at the farm shop reduced to £1.00.  All sliced up and in the freezer, so mushroom omelettes tonight with chips.  There might be cheese involved as well as I'm not as keen on mushrooms as Paul is.

I need to finish of the chicken tonight, I'm at a bit of a loss what to do with it though, I'll have another deep dive in the freezer later to see if I can find anything veggie like.

Lamb hotpot with Sunday’s leftover lamb, fridge clear out included, all prepped & just awaiting the sliced potatoes on top as it goes in the oven, himself is in charge of that bit as I’ll be out then :D

Mince beef as it's on it's used by, probably a chilli or pasta bake as there are no veggies left for the planned cottage pie.

Mmmmm quiche - haven’t had that for ages, so after a freezer delve unearthed pastry and some smoked salmon (I thought that had been eaten at Christmas ), I’ve made two smoked salmon, cheese and spring onion quiches.

One for tonight, but will be warming it up and serving with hot veg as it has been a grey day and fairly chilly day, plus another for OH to have a go at on Friday when I am working late  :)

Scampi and chips, real treat as we haven't had scampi for a while.  We'll look like prawns by the end of the day as we shared a prawn sandwich at lunchtime.
