I did find a bit of meat when cleaning up the carcase and that will get chopped up fine and some mayo added of turkey salad sandwiches.

To me, without doubt, the soup made from the carcass is the best bit of the Christmas Turkey...soaked up with loads of crusty bread...mmmmmm

Leftovers?????? Mmmmmm, I suppose you mean the cooked bits?

Having lots of leftover LIVE turkeys, thanks to the idiot who asked us to get him 80 day olds then never came for them.  In the freezer we have 13 turkeys cut up into joints and rolled and put through a sleeving machine, 40 odd very large turkey sausages, lbs of legs, wings and thighs and tonight We cut up the 4 turkeys which Brian wouldn't sell as they hadn't bled off as well as he likes, so I made them into turkey mince.  34lbs of the stuff!!!!

And during the past week and a bit we've had turkey burgers, turkey sausages, roast turkey, turkey goujons and chips and 2 days of turkey stew.  Must get a bit more inventive!!!    :lol:

but cooked leftovers, I either do a stew, curry or pie, or once I minced up the cooked turkey, mixed with a little egg, breadcrumbed the outside and made turkey nuggets with them.

Mashed Spuds
Cauliflower cheese
Sprouts
Cabbage
Carrots

Blend the lot, but not the spuds

Fry in loads of butter

turkey and ham pie, the sauce being bread sauce (made extra for it) mmmmm
turkey stew tonight
soup in the week from stock made with the carcass
