Potato storage help

I have a good crop of Sarpo Miro lifted in October and stored in my shed in hessian and paper sacks. The shed is not heated so I was surprised to see some of the spuds have started to chit ( I think that's what is happening) with small buds appearing.

Can someone advise what needs to be done to keep them in best condition?

Hello & welcome to the forums.

It sounds like there's not a lot more you can really do. I find it quite suprising that they are chitting so soon.

I have Sarpo Mira stored in my shed & they are doing nothing!
Did it really tell you to do THAT on the packet?

Its suprising how fast a shed will heat up on a clear day and if your shed is crammed full like mine it acts like a storage radiator. Best temp to store taters is 8-10' C (or so it said on the last sack i bought) :)

I've noticed this too in my stored Edzell Blue's. So, eat up the chitting ones first
The other varieties are fine so far

We periodically go through our stored potatoes & rub off any shoots/chits that are starting to grow, this seems to prolong the 'good' potato for a while longer.

I have a special cold storage room in my cellar where I store all my roots and jars. The ceiling is insulated with rigid foam boards and I hope to get the walls done eventually. The door is kept tightly shut to this room with no freezers or anything else to throw off heat. Despite this, by mid Feb I notice a few starting to chit as the slightly warming temperatures outside are affecting the inside temperature and the spuds react as nature intended.
