Crab apples

I have 2 conflicting bits of advice, 1 longstanding bit says that my small, dark red crab apples can't be used for crab apple jelly, but a visitor recently said that they could. Any advice anyone?

Any crab apple can be used for jelly. I used to have one with bright red flesh as well as skin and it made the most amazing ruby jelly.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.
