Corn off the cob
« on: August 09, 2007, 20:20 »
Does anyone know of a simple way to take the corn off the cob. I would like to freeze it so it is like the stuff you buy in the supermarket.
Is this possible?

I don't know how they get the corn off so perfectly for freezing.  The only way I know is to run a very sharp knife down the cob, then blanch and freeze.  I find this less than perfect way breaks some of the corn, but that to me increases the flavour.  Pick and freeze immediately as the sugar rapidly turns to starch.
Cheese makes everything better.
