Broad beans
« on: June 10, 2014, 08:47 »
Popped to the plot on the way home last night, so I could make a cunning plan for todays exploits.  I have many, many broad beans coming and can see an OH rebellion if I try and force feed him that lot  ::)

I save my freezer space for soft fruit, so aside from as veg on the plate, has anyone got any tried and trusted recipes for making more of them please  :)  I've got a Madhur Jaffrey one for an Iranian bean and rice pilaf style thing with fresh herbs that is good, but there must be more  :)

I think I am going to dry my surplus, if I get any.  I've used all last years up in soups.

We did risotto last night with chilli and lemon (I wanted to use mint, but didn't have enough). Would have been great to add bacon, but OH is a strict veggie. If you let them get really big, the skinned beans make really good hummus. They are also very tasty with dill, or a mix of mint and dill, blasted into a puree for putting on sourdough toast. Couscous salad with feta, parsley, roasted toms and beans is also yummy. I add a bit of chilli to it, but I add chilli to a lot of things that don't really need it.

Hope that helps. :)

We found a container of last year's beans in the freezer last night - so much for OH's freezer audits!  :nowink:

I'm starting to take down my broad bean plants as I take off the beans.

I'm about half way through and have a huge bucket of beans.  I sat for an hour yesterday podding them, sorting them into sizes, and blanching them.  The small ones have gone into the freezer, the big ones have gone into the dryer for soups and stews.

Tomorrow, the other half of the bed to go. :)

Just don't ask  my four year old grandson to pod them for you!  We provided him with a bowl of cold water to  pop them into as he loved podding them, the only problem was he took a bite out of each one and put half a bean into the water for tea that night! :D

Nick Nairn's baby plum tomato and broad bean "stew" is yum.  Roast the tomatoes in their skins with fresh thyme and olive oil (and season) - 20 mins at 200 degrees C.  Blanch the beans and pop out of their skins - takes ages but it is worth it.  Mix the beans in with the tomatoes and pop back in the oven to heat up the beans. Use about 600g of tomatoes to 700g of beans.

This is great with lamb or anything chargrilled!  :)
