jam thermometer
« on: July 23, 2014, 14:39 »
The handle has dropped off my thermometer and I have finally come to the conclusion that it is useless - I can  never get my jam to the correct temperature for a set according to my thermometer and yet it sets rock hard!  I send pots of jam through the post to a friend and it manages to arrive perfectly intact!

Can anyone recommend a good jam thermometer?

(Just made a glorious batch of goosegog jam.  Big dilemma is whether to give ANY of it away?!  ???  )

Years ago I bought a Kilner one - I think I got it from Robert Dyas  ;)

My lakeland one is pants, like you I have never got it up to temp and yet the concrete ( jam) sets once in the jar. Gave up using it I now use a cold plate and common sense

... and there's me thinking I just needed to keep up the boiling because it just woudn't get up to temperature..  The plate test tells me the jam is fine but the thermometer tells me to keep boiling.  Luckily its always eatable and scrummy so I may just ditch the thermometer after reading this.

Just checked out the Robert Dyas and Aldi thermometers - they are the same but Aldi ones are over 50% cheaper with some other stuff thrown in.

...But nearest Aldi is miles away - I think we must be in the only Aldi-free blackspot

I got mine to measure bottling point temperature and sugarcraft temperatures, you can't do that on a plate.......

But yes, they're not essential for jams and jellies  ;)

I don't bother with a jam thermometer.  You can usually tell if you are near to setting by the look of the jam and by doing the flake test with the spoon. Then I do the saucer test to be certain.

I do check the sugar level of the jam with the special tool for the job, (having a senior moment and can't remember what the darn thing is called), towards the end of the cooking time.

I look for a sugar content of at least 55%.

I think I remember it is a sugar refractometer.
