I've got this bad now.  I got buttermilk for soda bread today  :D   I also have a bunch of thyme. Pity I don't have a bunch of time.  Dog walking today to try and shed the effects of too much bread  :lol:

Did you find it easy to obtain buttermilk? I haven't seen it anywhere in this country.  Do you know if you can use skimmed milk instead?


Also an update on the latest sourdough loaf which was better than the last one. I left it to rise overnight, knocked it back and let it rise in the tin.  Took longer but was definitely better. Lovely flavour too.

Here's the thyme and olive loaf I did this morning. I only let it rise once, and did it in a 2lb loaf tin - like all the others. Just assembled the ingredients and let it rise for about three and a half hours.

Tastes great, and it's lovely and light. Still warm when I started eating it. Not much trace of the thyme yet, but this may come when it cools down. So I'm guessing that if you try this, be generous with the thyme.







BTW Lorraine Pascale does a good soda bread recipe.

I think LIVE yogurt is the substitute for buttermilk

I got mine from Tesco

Ta for the Lorraine P tip  :)

Lovely looking loaf there Scribbler.  Thyme from the garden won't be very pungent this time of the year as it is in the heat of summer. If you left the loaf a day, well wrapped, the flavour will have more time to develop.   Listen at me  :nowink:    :D  Sourdough expert after just one loaf  :tongue2:

I should have known. It was pre-packed (not growing) thyme from Tesco's, so not very fresh. Looking forward to growing my own again in the summer. It all died this winter.

It might not be dead. It might just be slumbering.  It takes some doing to kill off thyme, so don't be hasty. Wait and see  :)

Had my rye starter sd for breakfast, toasted. It's firmer and more dense than factory made bread but it's a lovely even crumb and good flavour.  It looks fabulous too  :)

I got the Dan Lepard book  :D  Read it from cover to cover already.  I went off to our local flour shop today only to find he'd sold the business and it now operates from the Cotswolds  :nowink:  Oh well our loss is their gain and all that.  He did have a small range of stuff left so I came away with a malted grain mix flour and some maltflake flour and some caraway seeds

Going to make the Lorraine Pascale soda bread now Scribbler. Ta for the tip  :)

Looks good enough to eat :lol:

Did a white flour loaf with rye starter today. Looking good.

The olive and thyme loaf has all gone now, but it really needs to be eaten fresh as the flavour seems to go quite quickly.

Torn between DL's focaccia and the cheese and shallot pie thingmy next...

Mmmmmmmmmmmmmmmm blimey I love all this.

The soda bread was gorgeous. I had some toasted this morning. Wow!
Will definitely be making that one again

I shouldn't think the bread lasting long was a problem Scribbler, it's that delicious it will just disappear straight away  :)

The sweet potato buns sound amazing. I made Lorraine pascale's pumpkin breakfast muffins and they are lovely. I cut them in half and put grilled bacon in them. Lush  :)
