Augustus, my spelt sourdough starter, has a sweet apple-like smell to him.  They all have their own personalties you know  ;)

Now I am thinking sourdough bread - slurp.  He may have to come out of the fridge for a baking session  :)

I like John boy :lol:  I will have to get him started. My sister had some of 'him' hers is Jane dough :lol:. My sister is called Jane :D

It worked I think - taste and texture a bit like crumpets  :unsure:  :D

It was quite a flat loaf though, perhaps I need a crock or something to bake it in?  I wanted to avoid using my loaf tins, in order to get a nice crispy crust - but this spread a bit too much I think.

any thoughts?..................

Did you use all white flour mum? I use the river cottage recipe which makes a sponge with 250g each of rye and strong white, plus 600ml water and a ladleful of starter.  You leave it overnight then next morning you add 600g strong white plus 25g salt.

I make 3 smaller loaves then bake on a tray.  1 big loaf spread too much for me as well.

This makes a loaf with a good crust and a slightly dense, but tasty crumb, that freezes well  :)

I used a mix of white and wholemeal - I think it would have been ok cooked in a small skillet or something like that. The preheated sautee pan worked, but allowed it to spread out too far, either that or the mix was too wet  :wacko:

If at first you don't..................................

I'll have a look at the River Cottage recipe - see if I can downscale as it's just for me  ;)

Im sure at some points of the year it's pretty close  ::)

I wasn't leaving mine overnight - can't wait that long for fresh bread, what would I put cheese on  :lol: Might try again actually the taste is much better that the fast action dry stuff.
