Okay, so we have nine chooks.
Each produces an egg a day, or an egg every two or three days.
This means that on any given two-day period we usually have at least 12 and at most 18 eggs, now that is a LOT of eggs to get through.
I've discovered scrambled eggs work pretty well, I have half a dozen with soy milk, six pieces of toast with butter and a juice and I'm done for breakfast.
I've tried poached eggs, with pesto and without.
Boiled eggs (hard and soft, in sandwiches too)
I've been considering omelettes too but out frying pan isn't quite so good for those...

So what about you guys? What egg dishes to you guys make? They can be simple or complex and for any time of the day! I just need to up my egg consumption (my family doesn't like eggs as much as me)

I make curried/spicy rice, it can be eaten hot or cold. You can add loads of chopped up or mashed eggs into that.

You can eat too many eggs BTW.  Swop them with your neighbours for other things ... like beer!  You cannot have too much beer :wink:

I didn't think of quiche!

W.G how can you eat too many eggs?
I do swap some to a neighbour, he's like a chemist so we can get vitamins and stuff at a lower price.

I found this site not to be exactly correct before, most professional would advise a few eggs a week is OK. :)

Ivana Trump (Donald's Ex Mrs) swears by three hard boiled eggs a day  :shock: She reckons it keeps her skin looking young and in great condition. She doesn't look bad on em either!

You can eat too many eggs harlequin.  When I belonged to weightwatchers years ago, they said you should only eat 4 per person per week!  Our dog eats more than that!!!!

But when I have too many eggs, I have frozen them before.  Once defrosted, they go all jelly like.  (you beat them first, don't just freeze them as they are), but they are great as scrambled or omelets.

I also tend to bake more of the Vistoria Sandwich/sponge cakes when we have more eggs as the recipes ask for more eggs, then when the chooks don't lay as many, I turn to rock cakes and things that don't need many eggs in them.  I also make a lot of lemon curd when I've got a glut.
