Melokhia

In response to a question on Grow Your Own, here's a recipe for Melokhia - never tried it but sounds interesting!

Melokhia
(from Richard Mabey’s Food For Free)
About a pound of young mallow leaves. Remove stalks, wash well and chop finely/ blend
Add to about 2 pints chicken stock and boil for 10 mins
Prepare a garlic sauce by frying 2 cloves of garlic in oil until golden. Then add dessertspoon of ground coruiander, pinch of cayenne and some salt and mix to a paste.
Add paste to the mallow/stock ‘soup’, cover and simmer for 2-3mins, stirring occasionally.
