This is my first year of growing Oca.  So far so good, foliage has grown up, fallen over and is now covering a large area.  How do I earth up the foliage as it is in a raised bed and overflowing the sides?

Do I pull it all back towards the middle of the bed and add some soil to the bed to cover the fleshy stalks?

I've not seen anything that says you have to earth them up 


aren't they s'posed to root, sometimes,  where the stems touch the ground?

Yes that is what I've read as well, I've also seen mention of earthing up.  I may just cover what I can with some homemade compost like a mulch.  The stalks may produce somemore tubers in this 'layer' as well as underground.

We earth up like spuds here in the rainy tropics bit like spuds but earth up as they grow at the begining rather than later.
