Bolting carrots?

Bolting carrots?

I have a couple of carrots that look like they've bolted. Instead of the thin separate green tops there is, in addition, a really thick one that has shot up through the middle. Probably as thick as a finger. What do I do with this? Do I pull the carrot out, leave it, or cut the thick shoot off?!!

I would take the carrots now and use them, when carrots go to seed the center core becomes hard.
