just found what looks like spots of white mould on melon and courgette plants in greenhouse. any advice anyone? also onions and shallots growing scapes-i pulled them off-what do you guys think i should do now? thanks.

The mould will be from the humid conditions - make sure the greenhouse is well ventilated. You can still use the onions and shallots which have grown flowers, but they will not keep well, so make a note of which ones have bolted and make sure you use them first. You can still leave them in the ground a bit longer, if you want to.

Agree with Kajazy, apart from the fact that some types of garlic grow scapes, which is normal (but they should be removed to concentrate the plant's energy into bulb production) whereas onions and shallots can bolt (which isn't normal but not particularly rare in adverse growing conditions.)
