I've just pulled up mine and they're all whoppers. Now to freeze them but I can't find any good ideas despite checking out Search. Any tried and true methods out there?

The only ones I freeze are the forked ones as I lift but then our ground doesn't freeze like yours.

The forked ones I scrub (not peel), boil and puree for soups, stews, pureed carrots and adding to mashed potatoes.  The puree freezes really well.

I know some people say to part boil them before freezing, but I simply scrub, peel and portion then straight in the freezer. I use them for stews or roasting and they come out fine.
Never tried the puree, but does sound good :)

Thanks Ruth & WG. I'll try both and see which I like the best later.

Today I brought in some potted canna lilies I forgot about and the soils are almost frozen solid. Soon, there's no chance I could leave stuff in the ground but the kale is simply loving it out there    Next year I won't plant it in the middle of the plot.

feed the soil not the plants

I do as Ruth and mostly use roasted,if we have too many then make into soup and freeze ,though we have loads of freezer space.
