When are shallots ready?

Apologies for sking such a simple question, but how do I know when shallots are ready to harvest? The bulbs have split into 5-6 per plant.
I have my own cement mixer and not afraid to use it!!

The foliage will start to go brown and die off when they are ready - some ease them out of the ground at that point to speed up the process, but I just leave them until the foliage is quite shrivelled then lift, separate, ( 8) !) and dry (then dry some more - in my experience any with thick necks or bulbs which are actually siamese twins are hard to dry out sufficiently to keep well and are best used first.)
Sow your seeds, plant your plants. What's the difference? A couple of weeks or more when answering possible queries!
