my sage bush has flowered is this now usless to use like when some herbs flower?

No you can still use the leaves.  It will get a bit woody over time, so it is worth chopping some of it back after flowering so it grows new softer growth.  The flowers encourage the pollinators too, so it is worth keeping them.
