Bordeaux mixture is not very soluble - Cu is released slowly by weathering/biological action and stops fugi growing but has little effect on the leaf itself.

However, CuSO4 is VERY soluble and is taken up quickly by the leaves - especially juvenile ones and kills the tissue. In field trials it has proved one of the best defoliants money can buy!

The plant should regrow fine - what concentration did you use?

That's due to the action of the lime precipitating the copper - but I didn't want to get into deep chemistry theory
