Hi all i froze a few stick of rhubarb for making crumble.  I have just defrosted some overnight and went to use it and it is very soft is this normal and can i still use it in my apple n barb crumble??????

I will go and peel the apples while waiting for an answer :D

Yes you can - it's just gone floppy cos it's defrosted.  It will be mushy in the crumble so no-one will know the difference.

did you cook it before you froze it? my mum always stewed rhubarb before freezing it, and then it's fine for crumbles etc.

my favourite at the mo is apple and damson crumble --yummy

Doesn't matter if you stewed it before, rhubarb can just be sliced and frozen and used as needed.  If you froze it fresh just remember to taste the fruit gloop to ensure it is sweet enough (and maybe a shake of cinnamon).

Sometimes I freeze my barb stewed, others  just cut it into chunks and freeze it like that, but that's usually the stuff I use for wine or jam.  It'll be fine, all fruit goes soft when defrosted, because of the water content.

oh sally, i just found some corn on the cob in our freezer (bought,not home grown sadly) - my husband must have bought it for me before he went to england (he can't stand it) --- guess what i'm having for lunch tomorrow :D

I only managed to freeze about 12, so that's one a month for me, or once every 3 months for us all until next years should be harvestable.

Hmmm....hard choice.
