old onions started sprouting, can they be planted like onion sets?

as the question says really, I have a few of last years onions that have started sprouting new growth, can these be planted like onion sets? or am I just best just putting them to compost.

they would run straight to seed, so not worth planting.
Chop what you can and use/freeze that's what I do  ;)

so could I plant them and then collect the seed ready for next year?
