i have some onions that i've pulled up they are in my greenhouse drying can i just start using them now they have been in there for a week now.

You can eat or cook onions at any time after sprouting, maturing or harvesting.  The drying or curing allows the "skins" to toughen which prolongs their storage time.  Some varieties are better keepers than others, look up the variety you planted to the determin how long they'll last.  :wink:  

We love onions, so mine never seem to make it to storage. :D
