Parsnips Starting To Grow

I have had a really good crop of Gladiator parsnips in the garden over winter which are now at an end. The surplus seeds were sown in large pots which have also done well however I notice the tops are now going green and starting to grow which I assume means they will eventually go to seed. Any idea how long it is before their beyond eating?

Excellent long growing crop by the way which we have been eating since last October :)

I'd probably want to get them out before the sprouting leaves get too big.  They will become increasingly woody, I think, so better dug up and frozen than left in the ground.
I try to take one day at a time, but sometimes several days all attack me at once...

No need to panic, but they won't get any better for being allowed to start growing again (the swollen root is a food source for the leaves (and eventually flowers) and therefore starts to shrink when top growth restarts.)
Sow your seeds, plant your plants. What's the difference? A couple of weeks or more when answering possible queries!
