I have one thats 3 months old matureing in a demijon.
When/if you decide to bottle it ad a half tsp of glycerin, this is suposed to give it a smooth feel when drinking, like a said though, get a few months behind it and you don't need to, i have been sampling mine in small shot glasses every month and it's a very nice drinkable wine now.
Have you thoroughly de gassed it?
