Fruit and nut trees

We have space for between 8 and 10 fruit and nut trees.  We already have 2 each of plum, apple and damson (I like planting trees in pairs) plus 2 old pear trees that have gone past their best so are coming down. Ideally I'd like to replace the pear and get another apple and plum. 

All suggestions will be gratefully received, only stipulation; plenty of produce, hardy (they have to survive N Derbyshire cold, drought and wind) and no more than 10ft in maturity :D

My personal favourite - Oullin's Golden Gage. Huge crop every year of beautiful plum-sized gages, good fresh and good cooked.

I don't know if they all taste as nice as Oullin's, but these are absolutely lush. Very sweet straight from the tree, I like them better than plums. Quite attractive too, going from yellow/green to yellow/gold with some red speckling. You can sometimes find them in the supermarkets, but they tend to be quite expensive when they are. My little tree has given me a monster crop every single year, no matter what the weather, and I'm normally giving away buckets full of them. They've always been quite problem free too, not really bothered by wasps or birds or squirrels unless I leave it too late to pick them so they're smelling strongly. They are supposed to be better for jams than plums because they're less watery. They're plenty juicy when you bite into them, but not so much that it's running down your face, if you know what I mean :)

Quinces are lovely: they are self fertile and you can get them on Quince A rootstocks.

They sound perfect and not one I'd have thought to consider :D  I'm also keen to get a couple of fig trees to grow in pots on the new patio.

Forgot to say, the garden is south facing and the trees will be on the east side of the garden :D

Can you have low growing Quince?

What about a Morello cherry?

I'm thinking of getting some Cobnuts, also in N. Derbyshire so would be interested in any experience of them 'up North'?

You can train them flat agains walls, I do know that, and they look superb.

Quince trees I have seen recently are between 1.5 and 2m tall, so this is not massively tall  :D

We've got a cobnut in the garden 'up North' absolutely fine plenty of nuts when the squirrels don't beat us to them and looks stunning in winter when all the leaves are off.

I have a twisted hazel in my garden, planted about 6 or 7 years ago. I have always admired it for its architecture throughout the year and this year it gave us hazelnuts (or rather the squirrel, as I wasnt quick enough).  Its just over 5ft.
Be a first rate version of yourself, not a second rate version of someone else.
