Plucking and hanging turkeys
« on: December 13, 2011, 10:05 »
Sorry to ask a silly question.....I am ok with the dispatching of my Turkeys but am getting confused with all the different advice out there. I thought to to pluck while still warm, then hang for  couple of days then gut. However I have read about bleeding them first ( not keen but if necessary will do), and some say hang for at least 5 days, and pluck afterwards !  Heeelp!!!!  lol
Any advice from experienced keepers gratefully received  :) ;)
Hooked on chooks !

cull, slit their throats to bleed and then dry pluck whilst still warm. Then hang in a cool place for a few days before gutting. This is the method Grannie Annie and her Brian used to do and they tasted yummy.
Staffies are softer than you think.

Kill, pluck, bleed, plucking whenwarm is so much easier or hang the bird up and do bleeding and plucking and hanging all at the same time. be effeicent.

i got all my advice from Grannyannie and have now been succesfully breeding my own turkeys, i do as joyful said, cull, hang from feet slit throat to drain blood, pluck dry while still warm (if you wet pluck them the meat starts to turn sooner) hang in a cool place by the feet not neck as they do for game for 7-10 days depending on size of bird and how many you have to do, then i dress and clean either Christmas eve or the day before depending who they are for and when i get chance to deliver. hope this helps.

The others are right, but I wouldn't like to bleed and pluck at the same time, messy!  Some people don't bleed, but let the blood drain into the neck cavity if the neck was broken, but we have found that sometimes if there is too much blood, it can stay in the breasts and makes the breast meat look at taste 'orrible!

and yes, gut as late as possible, as the turkey does start to deteriorate faster once guts are out.  They should really hang for 7-10 days like Kelly's do theirs, but it all depends on how cold your hanging space is.

We may not be rearing now, but Brian is still in demand for killing and dressing for other people!  And I would like to thank RachelR for making sure we and my Nici's family have a nice fresh home reared turkey this year!  :)
