Anyone make crispy duck?

I've got a frozen duck and would like to make peking crispy duck over the Christmas break - has anyone got any tried & tested method?

Oh yes please...I'd love to have a bash at this if anyone knows how....the frozen ones just don't taste the same at all.

I have done this before.  If memory serves, I just rubbed the duck with salt, sichuan pepper and five spice.  Then roasted it in a medium oven until well cocked.

I have made peking duck. Havent got full details with me, but remember a process over a couple of days. First was getting your hand in between the breast and the skin to loosen the skin. Then was pouring boiling water over to tighten the skin. Then was a day or so of basting and drying the duck. Then was cooking. Eating was really quick!

I have a vertical roaster - a frame which goes inside a bird - make cooking nice and even and really helps to get crispy skin on poultry.

Big paddy, do you put the duck on a rack so it isn't swimming in fat? Do you have to drain the fat off at intervals or can it just be left to "get on with it"?

As I understand the vertical roaster, it goes vertically into the cavity of the bird, so that the bird is higher than the pan and fat runs down the bird into the pan.
I try to take one day at a time, but sometimes several days all attack me at once...

theres a chineese girl called chang i think shes on food network and she has chineese meals in minutes shes very good im sure she has done that and also whole duck in plum sauce  .

I've made it and you had to marinate for a while, hang up overnight to dry then roast on a rack to let the fat drain. It was very good.
Recipe was in Ken Hom's Chinese Cookery which is quite old now.

Sorry I've never made crispy duck so cannot help with any receipe but a do love them.

I do however have a supply of the pancakes, from the chinese supermarket and hoisin sauce and have lamb rolls whenever there is any leftover lamb (I make sure there always is, just for me)  :D
