Hi all just finished digging over my beds, a little chicken poo on top. should i cover them over with black plastic and leave till spring, or leave them uncovered.

Do not cover them with plastic. Leave them uncovered or covered with a water permeable material (weed suppressing fabric, cardboard etc)

Totally agree - leave uncovered for the winter to do its work and for the rain to dilute the strength of the chicken poo. I would cover when weeds start growing next spring.
