Favourite leftovers recipe - what's yours?

I have a regular clear out the fridge set of recipes to use up all the bits, so I'm sure others do as well.   Off up the plot harvesting tomorrow so use up veg was the main aim today, so tonight we had fritatta with home produced eggs, onion, courgette and anchocha (unusual veg I am trying this year), plus beetroot salad on the side.

Left over curry from two days' worth of cooking, plus rice, all scrambled up with egg and newly fried onion  :D

'Bitza Pie', usuallly made with minced up left over joint with any left over veg, scraggy bits found in the bottom of the fridge and anything else left laying around.  Topped off with mash, pastry or filo.When the girls were little we also used to have 'bag meals', there were only three of us and things came in fours or sixes, the excess went into a 'bag' and then you could choose from the 'bag' which you wanted.

Leftover home made risotto eaten straight from the fridge.  Mmmmmmmmn. 8)

It's worth making a few extra roasties so you can snaffle them cold out of the fridge  ;)  :lol:

I sometimes cook a few extra to have fried with the eggs and bacon next morning,but dont tell my doctor :D

Agree with Lardman on this one - I try to make extra large stews so that I can freeze some and OH still manages to eat the lot.  :tongue2: :tongue2:   :D :D

My favourite left overs would be the same as Spana - left over potatoes lightly fried with bacon.

My OH is pretty good at hoovering up everything as well Springlands.  I was hoping for a slice or two of fritatta for my lunch today, but he managed to polish off the lot  :lol:  I have to hide any extra food I want to save for leftovers  ;)
