storeing plums for jaming

I've got a lot of plums ready but reckon it will be 2/3 weeks before the whole lot is ready ,which I intend to make jam with.What is the best way to freeze them until then,as they are,stoned,stewed,if seen one tip of destoneing them and adding sugar to the bag before freezing.Any ideas?

I'm the lazy type and I simply washed, halved, and stoned the fruit before putting into freezer bags. Once it's cooked later, it doesn't make any difference. All depends whether or not you want the skins in the mix or if you'll be sieving them out after cooking and before jamming. If you like skins in your jam, then coarsely chop them before bagging and freezing.

I normally fish the skins out of the pan while jamming the victoria plums whith just one or two escaping into the pots but the bullace trees are really drooping with so much fruit this year so I might try jamming them to .i reckon I'll try some sort of jelly as I don't like mychances of getting their skins and stones out.

If the plums are ripe, the stones come out quite easily. You don't even need a knife; fingers will work just fine.

I leave the skins on while cooking as it seems to help the pectin/setting part, but I squish everything through a sieve for jams and that catches all the skins. I'm not sure I could do a plum jelly.
