2nd year Rhubarb question

Hi
My rhubarb is just about coming up to its second year. I haven't taken any stalks off at all but I do seem to have lots of healthy looking stalks. Would I be ok to use these now? and secondly do I just let it die back naturally or do I cut it back?  Thanks

You can use them in the second year,  but at this time of year the oxalic content is often higher. In view of this and the fact it's not yet a full year old, I'd leave it.

Don't cut it back, it'll die down naturally.
Did it really tell you to do THAT on the packet?
