I had some that looked like that a couple of years back, perfect enormous heads. But when I cut them open they were infested with baby caterpillars on the inside, not a sign of them on the outside

So disheartening when that happens.

The credit must go to my brother-in law who did most of the watering, during dry periods.
Had one for tea last night, it was perfect, others are now in the freezer.

Me too. I love caulis but find them difficult to get right. I think it's just luck

yes very nice, mine seen to open up befor they get to any size(dont know why though)
