raspberry jam question
« on: June 23, 2011, 15:52 »
Just made a batch of raspberry jam, but it looks very very seedy  :(
I'm thinking of tipping it out & warming it to put it through a jelly bag....so far so good.

Do you think I will need to add more pectin to get it to set after reboiling

I wouldn't think so, as you don't usually add pectin to a rasberry jelly recipe.

And it is still early season -- they tend to get sloppier as the season wears on I've found

Ok I'll tip it out this evening, so it can drip overnight and I won't have to walk to @sda to buy pectin :) Result (I hope)  :D

In the end I just heated it and put it through a sieve with the aid of a wooden spoon, lost a jar-ful....but worth it to be seed-free :D
And it was beginning to set as I was filling the jars, so it's a good job I didn't add extra pectin  ;)

I'm on my last jar of seedy rasp jam from last year!! ( nearly time to go get some from the fruit farm... I don't have a supply at home). I dont mind the seeds.. they look pretty even if they do stick in your teef!!

I made some seedless the other evening.

I liquidised the fresh raspberries then rubbed them through a sieve, saving the seeds .
I use the jam sugar as it only needs 4 mins cooking which i think gives a better flavour and colour for soft fruits. I used about 2lbs 6oz of rasps which gave the required 1lb12oz after taking out the seeds.  Made three and a half jars.
Then cooked a few gooseberries in a little water- just used  the amount i thought they needed so cant say exactly - until soft then tipped in the saved raspberry seeds that still had a bit of raspberry on them.  Gave it a good stir and dripped it through a muslin. Gave about half pint juice which made the usual way gave a very nice jelly.  :)

Seems a bit long winded but you get seedless raspberry jam  not jelly if you see what i mean and the gooseberry and rasp jelly is a bonus.  :)

I shall certainly give this a try when I have that lovely raspberry glut later in the year

(I have some gooseberries in the freezer ready, now!)

Thanks for that Spana  :)

Made another batch this afternoon, its lovely without the seeds

Forgot to add before, the seeds and gunk left in the sieve after dripping the juice goes to the chickens, they love it so no waste

I do the jelly as the seeds give me terrible tummy cramps. I then dump the lot around the raspberry patch and let them grow into new plants. Do the same with strawberry trimmings or tough, nubbly berries.

I don't have dentures, I just don't like the texture of big pips........smaller strawberry pips are fine ;)
