Growing potatoes in pots , what level should the soil be kept at as the tops grow . ie should I cover the whole plant as it grows?

You should gradually add it and make sure the potatoes are always covered. Waiting a few weeks for it to grow inbetween adding more soil, then cover up until just the top set of leaves is poking out.

What variety did you plant roo?  I imagine that your weather will mean very careful attention to watering since a tattie with appreciable haulm will suck dry a pot of compost in no time at all.  Perhaps a 2litre pop bottle with a pin prick in it?

Also if you are getting 28degs C then the shoot must be growing at a helluva rate!
