I am completely metric except when it comes to my height.

I am  5'2" not 1.57metres!

So the question is, is the container big enough for spuds?  :D :D :D :D :D :D

I still say yes.

The 2 containers in which these potatoes were grown were 10inch high (250mm?) 'flower buckets'

A question,
if a 10in pot holds eough soil to grow a decent crop of spuds.........
why do we plant so far apart in the soil?

Probably because we want to use the soil again whereas in a pot it ends up pretty well exhausted and needs mixing in with something a lot better before it is good for much else.

Because the soil is a steadier environment whereas the little restrictive pot needs a load of faffing to keep it watered etc and if they were not next to my kitchen door would not really be worth the trouble.

Because we can earth up in a pot and the sides of the pot keep the extra soil in place instead of on the plot it tends to flatten itself out somewhat.

Because in the soil we want a proper decent crop - in the 10" pots pretty well anything is a bonus!

That said, nobody was more astonished than me at my inadvertent succes in flower  tup tatties last year!

8" deep in the container?

I've got another question but don't wanna start a thread... am I supposed to fill the raised bed with soil as they grow? and I'm presuming I plant around 8" deep for that too?

You could do that, but I'd suggest that you just put them in a trench in the raised bed and earth up as you go in the same way which you would in open soil.  How deep is the bed?
I try to take one day at a time, but sometimes several days all attack me at once...

It's roughly 60cm deep. How deep should the trench be?

Mine vary between probably about 4" - 12", depending on how energetic I feel and whether I earth them up immediately afterwards (thus increasing the depth of the trench).
