Just bought a couple of horse radish roots from the local garden centre but now need a few pointers on how to grow and harvest it. :D :happy:
Hurray finally retired

Just let it grow by itself, when the time comes to harvest just carefully dig up a section of root while trying to disturb the rest of the plant as little as possible.  You need a lot LESS root than what you think.   Cheers,   Tony.

Its extremely invasive so take great care not to let it take over as it will grow from even the tiniest shard of root material, where you might think you had successfully pulled it from the ground.

I've heard that it can be quite a spreader so might be worth keeping in a big pot if you don't want it taking over your garden/ allotment!

Put it in a pot / bucket, you can bury the pot in the ground, but you do want it in a large pot.  It spreads, and once it gets going it will take over you're entire allotment site if you do not keep it contained.

EDIT - I was beaten to it again, but I think I can see a pattern emerging.

I only wanted to make a pot of homemade horser radish sauce for on my dinner. So a big pot it is then :blink: :ohmy: :D :(

There has been a thread on this recently and yes...it spreads and is terrible to remove once it gets hold. I love the stuff but I buy the creamy horseradish in a jar - the only thing that spreads is my waistline..! :tongue2:
I work very hard so don't expect me to think as well.

Big (50cm) pots currently in Asda @ 3 for £10. I've just got some for the things I want to grow on my allotment but not invade it!

I have mine in a large pot AND its on a concrete slab.  Otherwise it will escape ...

Process the roots (into sauce) outside, and don't be brave/shy about not wearing goggles - you definitely don't want any in your eyes.

I used to have some horseradish in a big pot (before we moved house).

Apart from being good to eat (if anybody can figure out how to turn it into that creamy sauce thing), it is also a major slug magnet - all the slugs in out garden made a beeline for it - so it might be a good thing to dot around your plot (suitably contained, of course).

peel and then grate it VERY FINELY, and mix with creme fraiche (or similar), adding salt, pepper. I also add a bit of sugar too - it balances the heat of the horseradish wonderfully. And I let it stand so the flavour infuses somewhat.

And that is that.

I would experiment with proportions until you hit the balance that works for you but for me, I do a small pot of creme fraiche, a teaspoon of sugar, few gindings of salt and of pepper and a heaped teaspoon of horseradish and it is pungent enough.

Thanks for the info I'll use your recipe first and take it from there. Once you grind the roots can you keep it for subsequent pots of sauce. :blush:

once it has been grated and mixed in, no - as you will eat the flecks of horseradish. But you can freeze horseradish well enough - cut into small chunks and freeze as it is. Then defrost a chunk as you need to make up horseradish sauce as needed.
