Recipes for Runner Beans
« on: August 08, 2007, 11:07 »
Hi all....

I was wondering whether anyone had some exciting(?) recipes for runner beans.

We only planted 8 plants in our back garden and we are having to pick over 1/2 lb every other day (for the past 9-10 weeks!!!!!!!!).  As much as they are lovely we are starting to get a bit tired of boiled runner beans most nights!

Anything different or interesting would be appreciated - particularly as now the sun is out the plants have exploded with new flowers so we're expecting another glut!

Thanks!

Boil more than you will eat - put extra ones into vinaigrette or other salad dressing (while still a little warm).  Sprinkle with sesame seed.  Chill and eat with salads, etc.

If you're going to eat them raw ...

...grated in salads etc, use the smallest beans you have.

In desperation I put some into coleslaw a couple of years ago ... I had chronic stomach ache, as did everyone else.

And NEVER even in desperation eat french beans unless they're cooked!!

That's right Wellies.

All beans contain prussic (hydrocyanic) acid which is removed by cooking.  I often scofff a few raw runner beans while I'm picking them so it is probably in low concentration as it's never caused me any problems.  I think it's probably more concentrated in the bean itself rather than then pod.

Cold cooked runners, cut into 1" long slices with cooked bacon pieces or ham mixed in. Lovely with salad, or as a side dish with pasta.

You can bottle them in brine for the winter months too. Make sure you process them properly in the jars else they'll go mouldy.

Why not eat raw french beans?  I love raw french beans, though I only usually eat half a dozen a t a time, but they are really yummy, much better than cooked.  I could understand with runners, but then I don't like runner beans in any shape or form.

My OH only likes runners boiled, and doesn't like them frozen, so I gave half a carrier bag tonight to next door neighbour.  But what he did eat and didn't moan about, was I cut them into chunks rather than slices and froze them, then use them in stews through the winter.

He also doesn't like cougettes much, so I chop them and freeze them in small quantities too and they get chucked in the stews.

Curries and things too, anything to get him to eat them!!!  Tonight they even went in the risotto!
