Onion salvage

Onion salvage

I was so concerned with saving my spuds from frost in the shed I totally forgot the onions were hanging from the roof in nets after bringing some in for Chritsmas dinner I found the lot are totally frozen. I know that once they thaw it will be a rotting mess ( pity as best year for onions) could I salvage them and just put them in the freezer as they are frozen solid already or shall I just compost the lot and just remember next year to put them where they won't freeze?

you could make some french onion soup (minus the bread and cheese) and freeze it  :)
Staffies are softer than you think.

Had the same problem after buying a "bargain" sack and leaving them in the garage. I'm still using them as quickly as I can, but have frozen a load in locking boxes, hoping the smell will be contained. Frozen in quite largew sizes you can keep them quite free flowing so just get out what you want. Could also chop and caremalise for soups, I'd freeze in a little stock, or make some onion marmalade.

6 pots onion marmalade later and a big bag onions in freezer - thanks to suggestions at least I salvaged some and know to be a bit more on the ball next year!
