Christmas Goose advice please
« on: December 16, 2010, 12:28 »
We have spent the year rearing a goose for Christmas and although we did the same last year I would like some advice on 'doing the deed' to ensure a good flavour.

°  Should it be scalded like a chicken before plucking?
°  Should it be left to hang and if so for how long?
°  Should it be gutted immediately or left till last thing?

I did see similar questions on turkeys but rather than hijack that thread thougt another one would be preferable and wasnt sure if geese & turkeys are treated the same way.

Thank you experts.

Hi Eli, we don't scald any of ours whether chickens ducks turkeys or anything else,
Hang?  yes, preferably 2 weeks in a nice cold place, pluck asap but don't gut until last minute.

But someone will come on and tell you something different!

We had a goose when our kids were young, we hatched her from an egg, she was for Christmas, we even called her Christmas

All through the year she followed the kids round, waited at the kitchen door to have breakfast , she waited at the gate for the kids to come home from school, she got excited when they did (first people she saw when she hatched, so I think she saw them as her parents)

She complained if she wasnt fed on time, she loved sitting next to kids and sharing the paddling pool, she loved being petted, she kept all the cats out of the garden

When it came to do the deed, the wife and kids wouldnt let me

She had a great Christmas and a lot more, that was the last time I ever got a bird for Christmas, they come from a farm these days, oven ready

The moral is YOU cant eat a pet with a name  :(

It's all about the journey, not the destination

Last year's Christmas goose was called Batman.  The chickens through the year have been Elwood, Bunty, Babs, Ginger and Snowy.  This year's Christmas goose is LeTreck.

The rabbits we kill dont have names simply because there are too many of them.

Makes no difference whether they have a name or number or are just the Toulouse goose, I've raised them so I know they've been treated well but dont loose sight of their intended purpose.  Someone has to kill every animal that is eaten.  If I couldnt kill the animal myself I would return to being vegetarian.

Well said Eli!  We've lost count of the amount of people who have said how can you eat something you've raised from a baby?

Easy!  like you, we know they've had a good life, are not stuffed full of whatever, and had a good death too, which is important.  But most important is.........

THEY TASTE WONDERFUL!!!!!

What do you mean 'there is always one' ?

I got several grand kids, I'll keep one for Easter, the last on for my birthday (I'll get the BBQ out for that one)

I still need that oven though :D
