It does freeze quite well too.  I tend to add an extra egg as it is a bit runnier.  We have pumpkin pie all year round!

Reading this thread had reminded me of my main pumpkin pie disaster. In my O'level food and nutrition, I made one, worked perfectly until I put it on the side after the cooking.... It fell off the table ( I didn't put in on properly) and ended up upside down on the floor - it was a mess!!!
Managed o salvage a very messy slice and pass my exam, but I could have cried!!
