re doing jam
« on: November 05, 2010, 09:07 »
Made some courgette and pineapple jam. Have put it all into jars but has not really set. Can I take it back out of jars and re do it?

Wow, that sounds an intriguing recipe. Did you have to add any pectin? If you didn't that could be the problem. Short answer is that yes, you can re-do it adding perhaps lemon juice or commercial pectin. Re-sterilise your jars and lids.

I'm presuming it's this one http://www.allotment-garden.org/recipe/1432/pineapple-courgette-jam-recipe/

You should have added the pectin in the form of jam sugar which already has it in it. If not, do as catlar says.

I did use the sugar with added pectin but for some reason it did not set like other times.
