process of pickiling chillis

hi all i have loads of chillis and wanted to try pickling some. I havent got a clue about the process such as
what vinegar to use ect ect...

Can someone please explain the process for me :)

I just pack mine whole in jars, and pour in white vinegar, making sure there are no air pockets.

Sterile jars of course  ;)

I whizz mine up in the blender first and then cover in white wine vinegar to make a sort of lazy chilli. I've never had any sucess at freezing them.

I just freeze them whole, no blanching, and use them from frozen  :D :D :D

I have about 300 frozen and the missus refusses to let me have any more room in the freezer.....

If freezing make sure you chop the chillis before they defrost otherwise they just go soggy, i chop them up after a couple of mins max. They are there for flavour and heat so you shouldnt have a problem at all as long as they are in a sealed bag :) :)

Got 6 bottles of the lazy chilli sauce as well i did the same thing, blittzed them added white wine vinegar bit of sugar and salt, blitzed again and put in fridge. This last for ages and is greay for pasta, soups, vinegareets and salads....

I make myself some pickled chillies every year.  I half the chillies, deseed and pack them into jars.  I used basic white distilled vinegar and it comes in a bottle that is 568mls.  Heat it up gently with 225g granulated sugar until the sugar melts and it's just coming to a boil, then leave to cool and pour over the chillies. 

They are hot but not mind blowing this way.  Lovely with cheese or cold meat, or just straight out of the jar  ;)

I simply freeze the them whole as soon as picked. They keep their heat and their flavour, and are perfect when used in curries, chilli-con-carnes and the like.
