I sauteed them and then pureed before freezing last year.  Great for adding to soups.

just done soup with mine, use 6 at a time, really easy to make and really tasty. will put the recipe in the recipe maybe tommorow.

I make a ratatuille type concoction using tomatoes , courgettes and garlic,fry in a little olive oil and cook till the liquid is reduced, freeze this and put it in any pasta sauces, lasagne ,casseroles,curries etc

As above,they do not freeze well on thier own sliced as the water content is too high and you defrost into a mush .Then vow to grow less plants next year,but still end up giving them away!   We`ve either been there or still terrorizing friends and family with our surplus every year!
