hello can anyone tell me the age when a hen is classed as an adult?

At about 1 year.  They are "mature" once they start to lay, but will keep growing and often beefing up up until about a year.  It may take 2 or 3 years for a cock to reach full growth.

female chickens under one year are referred to as pullets, over a year they are hens :)  this is aso tru for cockerals vs cocks.
