The problem is always that celery needs a long growing season and that is is not frost hardy.

It needs to be started in March/April but not planted out until after the last frost with 5/6 leaves.

You have another month of growth.

It might not be self blanching in which case the stems will stay green (unless you earth up / cover up).  They will survive under a cloche for a while if you get some mild frosts, but any significant frost and they will probably carp it.

Can you not just start using the stems small?  I use cut and come again for stews / bottom of roasting tins etc.  Pretty sure you can use the leaves too?
