I'd taken my eye off the garden for a few days - with the usual results.
Into the stock pot went.
4lb oversized courgettes
1lb split over ripe tomatoes
1tsp salt
1tsp cumin
1tsp coriander
1/2tsp fenugreek
1/2tsp turmeric
1tsp madras curry powder
A few garlic cloves
A bit of ginger
3-4 Mugs of water.
Simmer to a sludge and blend.
Can be used as :
Soup. With a fresh crusty wholemeal roll.

Curry Base. Thin with water a little, add chunks of spud, mixed chunky veg (even frozen) or precooked diced meat , fresh chili peppers and a little oil, reboil to thicken.

Curry Sauce. Add chili powder, thicken, spread on chicken, spud wedges or even chips.

Not bad for leftovers ... everything was in my cupboard so I can almost guarantee its in yours
