Yes, with ethylene gas, the same as given off by banana skins.
Did it really tell you to do THAT on the packet?

Assuming you have enough fruit, encourage the green tomatoes on your vines to ripen by removing any remaining flowers. The flowers may now not mature into fruit anyway, so removing them will signal the plant to finish setting seed by ripening the existing tomatoes. Also remove any side shoots and some of the lower leaves especially any discoloured ones, this will also signal the plant that the resources to make more seed are not available. The absence of leaf will hasten ripening as the sun and air have easier access to the green fruit.

I did not no this - will get on and sort mine out then.....tomorrow, as have some lovely toms but way too many new flowers and leaves
