I have just copied the greengage jam recipe from the site and notice a comment that someone found the jam too sweet. Is it alright to cut down the amount of sugar from say equal quantities to 3/4 lb sugar to 1 lb fruit?

Taste your greengages first, some varieties are very sweet, some not so.
