and when do you crop peretual spinach?

I plant it up and when it gets big enough, just treat it as a cut and come again leaf. Works well for me.

just pinch off any leaves that you want to use, without taking them all off one plant at a time, then you can keep cropping as the plant throws out more leaves. I start with the outer ones before they get too leathery. If it looks like the plant is going to bolt, pinch out the top of the plant.

I grow it for me and the hens. The hens get the scruffier leaves

It does for me - melt a knob of butter in the bottom of a big pan, sprinkle in a bit of Garam Massala and full the pan with spinach. Once it's all wilted, it's ready. :happy:
